Formaggio di Fossa Cheese Museum
The Museum of the aged cheese is located at "Fossa Pellegrini" farm, in a cavity built between 1200 and 1400, where Pellegrini family for generations continues to preserve an ancient practice. The museum is a treasure of traditions and customs, and tells the story of this ancient practice used perhaps to hide the products during enemy raids. The museum is primarily an olfactory experience intensify as you get closer to the carved hole down into the stone. The "Fossa Pellegrini" is opened every year in early August, in these days farmers, private individuals or dealers can bring your own cheese to mature into the cavity until mid-August.
